Pumpkin Chocolate Chip Muffins

Since it is cold again today, I wanted something sweet and cake like to eat. I had planned to try some pumpkin chocolate chip muffins soon, so today was the day. With the pumpkin, it should be healthy, right?



Today I used a quick, easy recipe from the Cake Mix Doctor, Anne Byrn, that I had first seen in her book Cupcakes from the Cake Mix Doctor. She also has the recipe for these Pumpkin Chocolate Chip Muffins on her website.

If you don't have a muffin mix on hand, try this recipe from my mother-in-law, Martha Atkins.


MARTHA ATKINS’ PUMPKIN MUFFINS WITH CHOCOLATE CHIPS

1 c. sugar
1/4 c. vegetable oil
2 eggs
3/4 c. canned pumpkin
1 1/2 c. flour
1 T. baking powder
1/2 tsp. soda
1/4 tsp. cloves
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
1 cup chocolate chips
(mini-size)

Preheat oven to 400°. Grease 12 cup muffin pan. Mix sugar, oil, eggs, and pumpkin. Sift flour, baking powder, soda, and spices. Stir two mixtures together. Fill muffin cups about 3/4 full. Bake 20 to 30 minutes. Note from Martha: These can be made with raisins or nuts, but the boys always favored mini chocolate chips.
